For the most part, members of the Royal Family who are entitled to the style and dignity of HRH Prince or Princess do not need a surname, but if at any time any of them do need a surname (such as upon marriage), that surname is Mountbatten-Windsor.
If my professor has taught me anything it is that the Monarchs don't actually have surnames except if they lose their status as a monarch. The best example I can think of is King Louis XVI who was made a citizen and forced to take the last name of Capet where he didn't have one before then...
