      It's time to do some experimenting with wild yeasts. I had the inspiration for this a couple of weeks ago when I saw that my peach tree out front was producing really well. As soon as I saw that I thought "I should make peach beer!". Then I thought to myself "There's wild yeasts growing all over the outside of it... I should use those."

      So the initial idea was just to make a sweet wort, and then throw in unwashed fruit. That way I would get peach flavor from all the juices plus lambic yeasts. But I wanted more control. So the idea is to capture the wild yeast first, inoculate, isolate what I want and then add it to the wort.

      The first step is to collect some wild yeasts, which is what I'm doing right now. Like I said I have the peach tree growing out front, but I also have a crabapple tree out back. If you've never smelled/tasted a crabapple they're small stone fruit. When ripe they smell a lot like a plum crossed with a nectarine.

      So I skinned the fruits and placed each in it's own sterile bottle. The next step was to make a sweet wort. Ideally I would use some dried malt extract, but I don't have any, so I'm using dried corn sugar. All I did was at it to water and boil. I got a gravity of 1.032. All that's done now is adding it to the bottle with the skins and allow fermentation.

      I fully expect to get some odd funky/sour flavors. But I should also get some nice fruity notes as well. The one that ends up more fruity (probably the peach) will be for a wheat beer. And the one that ends up more sour (probably the crabapple) will be for a darker beer like an Oud Bruin (e.g. The Duchesse). Of course each of these will be fermented along with juices from their respective fruits.

      For the darker one I intend to soak some wood chips, probably hickory or maybe cherry wood, in scotch to sterilize and then add to the fermenter. This will then harbor the yeasts for future batches.

      Then again this could all go to complete shit.

      On the list of top three nights of my life. It was insanely fun. It was a beer dinner hosted by Sam Calagione of the Dogfish Head Brewery at the Alamo Drafthouse. We drank something like 15 amazing beers all paired with food. There was a jazz band playing intermittently. And Sam was funny as shit. The picture is of me and Sam at the end of the night. I was so hammered I had no qualm with throwing my arm around a perfect stranger. Plus he signed my mash paddle.

      Gah, that looks like an amazingly fun night! Also kind of makes me wish I lived in Austin or at least somewhere close enough to hit that up. I think I want to move to Texas if only for a year or so. I want to leave Seattle and live somewhere new. Also I hope you choke the next time you're sucking cock through whatever glory hole you find yourself kneeling in front of. ;)

      What do you use for your labels? I've been wanting to make beer labels.


      I don't do anything particularly fancy, though printing out labels is a bit fancier than writing out the labels yourself, I guess (which is what I normally do). Anyway, this time I doodled something up in Photoshop, repeated the image in Word using narrow margins, and then printed them out on sheets of smudge-free mailing labels. I was able to fit two of my labels on one of the mailing labels, and I just have to cut it down to size and slap it on the jar.

      For designing your own label, here's a super fancy tutorial that looks easy enough to follow: vector.tutsplus.com/tutorials/designing/design-a-print-ready-beer-label-in-adobe-illustrator/

      As for the kind of labels, you can probably find pre-stick labels available in the right size (or at the very least, you can cut them down to the right size). If you want to reuse the bottles though, the pre-stick labels are harder to get off. You can also find labels designed specifically for beer bottles online (the cheapest I've seen is about $8 for 32 labels), some of which are designed to be removed easily and they'll definitely be more water-resistant than the pre-stick labels.

      If you haven't yet, you should definitely try to find at least a pint of Rogue John John Dead Guy Ale. It's basically Dead Guy Ale aged in a Rogue Dead Guy Whiskey barrel. It's amazing. But they only made a 3,100 gallon batch and after that they're moving on to another one. It's delicious stuff.

      My parents bought me this and so far they've all been really nice. I'm not super duper into cooking yet because I can't afford ingredients, but when I get a job, I plan on learning as much as I can fit in my tiny head. Also Hamstar, while a dear, is all about survival/efficiency- I'm not quite in the same lifestyle, so I'm looking for comfort and longevity as well.

      Also I think I'd cut a finger off in a mandolin.

      I've glanced at the brewers web sites and it looked like a lot of equipment needed to do it right. Then I read a bit on the cooking process and it looked like you have to dedicate quite a bit of time to get the beer brewed correctly.
      I guess I need to get the book you recommended and look into it further before I trash the idea totally.

      What kind of bottling/keg storage do you use, and how well does it keep?

      Stoked about your interest! I'm going to put it up this week. Thursday most likely as I have the day off. I've been trying to compile a few wine reviews to stock up to start things off so that it gives everyone else time to write.

      On a side note, did you catch Top Chef Masters? I know you hate the regular version because you're better than some of the idiots they get (like someone that doesn't know how to use a knife...seriously?), but this was the professionals. I personally am going to stab Kelly Choi before the season is over, otherwise I kind of enjoyed it.

      Not at all. You can try whatever you want and then basically give a review. I already have done a wine (haven't made the group yet, but wanted to get a little more buffer going before starting the group) that I personally hated. Everyone has different opinions, but I was going to try and put some sort of bio section on the group to give people a fair idea of who they might lean more towards. For example: when it comes to white wine I'm a high end snob. If it isn't at least $20-25 a bottle I'm probably not going to enjoy it at all. Thus my reviews for a $7 chard might come off as harsh, but other people might really enjoy learning about the vineyard and like what they hear, so they may still go out and try it.

      I want people to get excited and be able to review things, but I also want to educate people about different kinds of alcohol and get them interested in learning about the history and backgrounds of the breweries/distilleries/vineyards.
