      So, I had a much easier time creating a meal for this challenge than I did the last one. I'll eat ramen plain so adding other ingredients to it just comes as a bonus, For this one, I made beef pad thai.
      Ingredients:
      Ramen
      Peanut butter
      Mushrooms (optional, I just like mushrooms)
      Beef (I used stew meat, but you can use any meat or tofu that you want)
      Olive oil or vegetable oil
      Spices

      You want to start by getting the water boiling and the noodles in there. While the noodles are preparing, start grilling the beef. After three minutes, the noodles will be done. You then add the noodles and the spice packet that comes with them in with the beef and start frying them. I also added the mushrooms and some more spices in at this point as well. The frying portion can last as long as you want it to, but I like crispy noodles so I left them in there for awhile. Just make sure your beef is completely cooked before calling it finished. Once it's cooked to your liking, take a spoonful of peanut butter and add it to the concoction and stir so that everything is evenly coated. And ta da! You have your very own college student pad thai at a fraction of the cost.

      Here's where everyone gets to post their wonderful chili creations. Make sure to post at least one picture of the final product and the recipe in your entry, though photos of the cooking process are greatly encouraged. I also feel that it's only fair that since I'm forcing you guys to go through this pain and suffering, I should go through it as well. I won't be entering the competition, I'll just be making something up so that the crap I buy doesn't go to waste. My awful meals should also be taken as encouragement that you can do a million times better than me.

      My meal: Chili mac

      Next time I do this I'll try and make up something better than just chili on top of spaghetti, but I'm running low on groceries and this was all I had this week. Hopefully I'll be more creative next week. I also suggest not getting Hormel chili as it looked and smelled like dog food, and though I've never eaten dog food, I imagine it tasted like it as well.

      There we go. Everything is better with ridiculous amounts of cheese. (Editor's note: No, not even this was made better with cheese.)

      Recipe:
      Canned chili (I used the kind without beans, cause I don't like farts. What can I say? I'm a classy broad.)
      Spaghetti
      Shitload of spices to cover up the taste of the canned chili
      Cheese

      Final thoughts: Beans might have made an improvement to the texture, but I doubt it. It was way too thin and the only texture was the ground beef (god I hope it was beef) and the onions that I added. And no amount of spices could cover up that Hormel taste. If I were to try this again (which I might have to since there's still plenty of chili in the fridge) I would definitely add something to texture it. Maybe more ground beef or ground turkey and tomatoes or corn. Again, I highly recommend that you find a better brand of chili than what is sold at gas stations.

      So, school is finally winding down (just two more finals on Monday) and winter break will soon be here. This means I will finally get to try something that I've wanted to do for over two years. MAKING MY OWN DELICIOUS BEER! It's something that I've desperately wanted to try, but I was too scared to spend a bunch of money on equipment only to have it turn out horrible. Well, I found out that one of my friends home brews with a group and is willing to teach me and let me use equipment so I can see if I like it. My roommate is also interested in home brewing so we'll kind of be learning together. This group is also working to become a home brewers guild on campus to help out other people that want to get into it, but were nervous like me. This plan as already helped me make a couple of new friends and I haven't even started yet, so it can only get better from here.

      I've finished up my first week of working at a zoo and it was both fun and exhausting. While I'm only a lowly unpaid intern, I'm still there for 40 hours a week and getting a lot of training and knowledge about how things work in zoos. I'm loving both the animal care parts and the talking with the public parts. It's the behind the scenes maintenance and cleaning taking up 75% of my day that wears me out a little. Overall though, I'm very much looking forward to making zookeeping my career and I'm excited to give my first ever feeding chat tomorrow. I'll be talking about and feeding the otters and in honor of that I thought I'd share some adorable otters with you all.

      Just two more weeks until school is done for the year.
      Just two more weeks until I can start my summer job.
      Just two more weeks until I can go home.
      Just two more weeks until I never have to see my alcoholic roommate ever again. Seriously, she's had her stomach pumped twice by the age of 22.
      Just two more weeks until I get to spend one last summer with my high school friends.
      Just two more weeks until I can go camping.
      Just two more weeks until I get to see my best friend again. Talking on the phone isn't nearly as fun as the real thing.
      Just two more weeks until I can go fishing.
      Just two more weeks until all this stress is gone.

      All my friends graduated college yesterday and got to start their final summer before the real world. This morning I got woken up by my drunk roommate screaming on the phone at her sister at 3:00 and then woken up again at 5:00 when she had some random guy came over. This is going to be a long two weeks. :/

      Hey there. I've been enjoying the Happy Homemakers group you started and I was wondering what you thought about a possible new thread. It wouldn't be any fun without the participation of other users, so if you liked the idea, I was hoping you could promote it with a group announcement.

      It's basically my latest journal -- laying out weekly meal plans.

      One of my biggest issues with starting to cook more is in planning meals. I've started getting better at it, however, so I was wondering if a thread devoted to creating and sharing plans would be something fun for the group.
